Vegan Summer Pasta Salad

This recipe is perfect for any summer picnic this year. Quick, simple & delicious.


Prep Time: 5 minutes

Cooking Time: 15 minutes

Yields: 4-6 Servings


Ingredients

1/2 zucchini, small diced

1/2 red bell pepper, small diced

3 spring onions, chopped

1 cup of corn (if using frozen, thaw in fridge a few hours before making recipe)

1/2 lemon, juiced

Handful of fresh parsley, chopped

3 T hemp hearts

1 box Banza gluten free chickpea pasta

Directions

-Cook pasta to instructions on box. I used Banza brand! This brand is gluten free, vegan, soy free, high in fiber & protein, and made from chickpeas!

-Chop & dice zucchini, red bell pepper, spring onion, parsley and add to bowl.

-Add corn and hemp hearts to bowl, juice half a lemon and toss together!

-Once pasta is finished add to bowl and drizzle with olive oil.

-Toss & enjoy!

Add your favorite greens and turn this bad boy into a full salad!
